Lavender Chocolate Pudding

March is my birthday month and I made the executive decision to find a way to celebrate every day. One of the things I did was try a new recipe for coconut macaroons. They were delicious, but they also used four egg whites so I had four egg yolks leftover and I dont like wasting perfectly good egg yolks. I found a recipe for chocolate pudding from scratch from Chocolate, Chocolate and More. As I was making it, I thought, what if I throw in some culinary lavender? This recipe for lavender chocolate pudding is nothing like the chocolate pudding you enjoyed as a child.

When I was at the PA Farm Show this year, I had the chance to taste a piece of lavender chocolate from Hope Hill Lavender Farm. I fell in love with the flavor combination. Lavender is relaxing, chocolate is relaxing, pudding is delicious. It just makes sense to combine the three. I never made pudding from scratch before, but I am definitely going to be making it a lot more in the future. Making chocolate pudding from scratch really isnt that difficult and it doesnt take a lot of time either. This pudding turns out rich and creamy and full of flavor. So go ahead, relish every single bite. Lick the bowl clean, too. I wont tell!

Lavender Chocolate Pudding

Ingredients

  • 2/3 cup maple sugar
  • 1/3 cup Hershey’s unsweetened cocoa powder
  • 1 tsp culinary lavender
  • 2 Tbsp cornstarch
  • 2 1/2 cups of milk
  • 4 egg yolks
  • 2 Tbsp butter
  • 1 tsp vanilla
  • pinch of salt

Instructions

  1. In a medium sauce pan, stir together the maple sugar, cocoa powder, lavender, corn starch, and salt.
  2. Heat over medium-low and whisk in the milk.
  3. Whisk in the egg yolks and stir until smooth.
  4. Continue to stir until the mixture begins to boil.
  5. Reduce heat to low and stir a few minutes until the pudding thickens.
  6. Strain the pudding through a wire strainer and discard the lavender and any lumps that remain.
  7. Stir in the butter and vanilla.
  8. Place in an air tight container and chill until ready to serve.
