Ricotta Parfait

ricotta parfaitThis ricotta parfait is a great way to start your day, enjoy it as an afternoon snack, or even serve it for dessert.  It’s healthy and can be just what you need any time of day.  The only ingredients in this recipe that come from a non-local source are the cinnamon and vanilla I used to make the granola.  That means the yogurt, ricotta, jam, oats, and nut butter can all be found locally.  

The yogurt is from Fiddle Creek Dairy in Quarryville, PA.  The ricotta is from Caputo Brothers Creamery in Spring Grove.  Both can be purchased via Apple Valley Creamery‘s home delivery.

The jam and honey are from Strites’ Orchard.  The oats are from Kauffman’s Fruit Farm.  As usual, the nut butter is from Blind Spot Nut Butters.  

Ricotta Parfait

Ingredients

  • 1 cup ricotta
  • 1/2 cup yogurt
  • 1 10 oz jar jam of choice
  • 2 cups granola

Instructions

  1. Whisk the ricotta and yogurt together.
  2. Layer ricotta mixture, granola, and jam as desired.

Homemade granola is super easy to make.  Take 2 cups of oats and mix them with one teaspoon of cinnamon and one teaspoon of vanilla.  Take ¼ cup of nut butter and ¼ cup of honey and microwave until they are melted enough to stir together.  Mix the nut butter and honey with the oats and spread on a baking sheet lined with parchment paper.  Bake at 325 for 15 minutes.

This recipe is pretty versatile.  You can make different granola, add nuts, or even switch out the jam for fresh fruit.
