If you liked my recipe for Mediterranean green beans, youre really going to like this recipe using another of Calicutts Spice Co spice blend. The Garden Citrus blend has mustard seed, coriander, rosemary, thyme, lemon and orange peel. It adds the perfect flavor to this summer couscous salad.

Im all for tasty recipes with little effort. Being chronically ill, I sometimes have limited energy, but we all need to eat, right? I used Purdue Grilled Chicken Short Cuts, but feel free to use leftover grilled chicken if youve got it. Leftover rotisserie chicken would probably be delish as well! The yellow grape tomatoes and basil were freshly picked from my garden. The tomatoes are sweet, and I may have eaten a couple off the vine when I was picking them.

The hardest part of this recipe is cooking the couscous. Mix all the ingredients for the dressing in a jar and give it a shake before pouring it on the couscous. I let the couscous cool for a little bit before stirring in all the ingredients, but you can stir them in right away if youre impatient. You can even eat the salad warm if youd like. I set it in the fridge overnight for a quick lunch the next day. I considered tossing in some parmesan or sliced red peppers, but I kept it simple with just the few ingredients youll find in the recipe for summer couscous salad below.

Summer Couscous Salad

Ingredients

Dressing

  • 1/2 cup olive oil
  • 2 Tbsp vinegar
  • 1 Tbsp lemon juice
  • 1 Tbsp Garden Citrus spice blend
  • 1 clove garlic minced

Couscous Salad

  • 1 cup pearl couscous
  • 1 Tbsp olive oil
  • 1 1/2 cups water
  • 1 cup grape tomatoes sliced in half
  • 8-9 oz cooked chicken cubed
  • 1 cup mozzarella pearls
  • 1 handful basil chopped

Instructions

  1. Mix dressing ingredients in a jar and set aside.

  2. Heat 1 Tbsp olive oil in a saucepan over medium heat.

  3. Add couscous and stir 1-2 min.

  4. Pour in the water and bring to a boil. Reduce heat to low and simmer 8-10 minutes, stirring occasionally.

  5. Place the couscous in a serving bowl and stir in the remaining ingre

  6. Toss in the dressing and serve warm or cold
