Sauteed Okra and Tomatoes

Meanwhile over here, I am finally getting back in the kitchen and creating some tasty new recipes.  You may have heard about my gastroparesis diagnosis. Well, on Wednesday I met with a nutritionist and she gave me some great advice.  She also thinks with some work, I can retrain my stomach to do what it’s supposed to do. That would be nice!

We talked about getting more plant based foods in my diet so I made a trip to Strites’ Orchard and picked up some okra.  I have a ton of cherry tomatoes in my garden so I decided to sautee the two with a little bit of garlic and basil.

The only time that I’ve ever had okra has been in cajun dishes so sauteeing the okra and tomatoes was something different.  It is still delicious, though! Make sure when you slice and wash the okra that you dry it off completely.  This helps prevent the okra from becoming slimy. Nobody wants to eat slimy okra!

Sauteeing the okra softens it up while still maintaining the perfect bit of crunch.  Sauteed tomatoes should be on every summer dinner menu. The basil and garlic go perfectly together with the sweetness of the tomatoes and the mild flavor of the okra.

Sauteed Okra and Tomatoes

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 2 -4 servings

Ingredients

  • 1 pint okra washed and sliced
  • 1 cup cherry tomatoes sliced in half
  • 1-2 cloves garlic minced
  • 1 Tbsp basil chopped
  • 1 Tbsp olive oil

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the garlic and saute about one minute.
  3. Stir in the okra and continue to saute 4 minutes.
  4. Stir in the basil and tomatoes. Saute an additional 4-5 minutes or until the okra is soft.
  5. Serve warm.

  1. That looks yummy, Mikaela. We don’t eat a lot of okra, but we should. When cooked properly, they’re really delicious. And I think your simple recipe is perfect; there’s no evidence of slime at all 😄 Thanks so much for cohosting. I hope you’re having fun!

  2. I tasted okra for the first time (that I can remember) down in New Orleans a few years ago and loved it. I since made my own recipe using tomatoes and okra so I know this version of yours is good. I have been trying to include more whole foods and plant based foods in my diet and it definitely made me feel better – good luck!
