Sweet Bologna Roll Ups with Cream Cheese and Bell Peppers

I love Seltzer’s Sweet Lebanon Bologna. It’s great on sandwiches, but it’s especially great rolled up with cream cheese. Sweet bologna roll ups with pickles are a classic appetizer from this area, but I decided to change them up a bit this time by using pickled bell peppers instead of regular pickles. You can stick with the pickles if you want, but you should definitely try these roll ups with bell peppers, too.

Sweet bologna roll ups are easy to make and taste delicious. I have a sweet tooth so the sweet bologna combined with the sweet bell peppers and mild cream cheese really hits the spot. I’ll be honest, I could eat these with just bologna and cream cheese, skipping pickles or peppers completely.

First, you’re going to want to let the cream cheese soften so it’s easier to work with. I put mine in the microwave about 20 seconds. Lay out one piece of bologna and use a butter knife to spread on the cream cheese. Lay the sweet peppers down lengthwise on the bologna.

Roll up the bologna and place 3 toothpicks in it. Use a sharp knife to cut the roll up into three pieces, about an inch in size. Serve chilled.

Ingredients

  • 8 oz Sweet Lebanon Bologna
  • 4 oz cream cheese softened
  • 1/2 cup pickled bell pepper slices

Instructions

  1. Using a knife, spread an even amount of the cream cheese on a piece of bologna.
  2. Place the pickled bell pepper slices lengthwise on the bologna.
  3. Roll up each slice of bologna and place 3 toothpicks in the roll.
  4. Using a sharp knife, cut the roll in 3 even pieces.
  5. Repeat for each slice of bologna.
  6. Chill in the fridge for an hour before serving.
