Easy Baked Salmon with Lime Sauce
I don’t know about you, but I thought spring was supposed to be warmer here in Central Pennsylvania. Instead, it’s the beginning of April and they’re still calling for snow. Snow in April! I just want warm weather, fresh fruits and veggies, and to start planning my garden. While Mother Nature is still trying to get her act together, this recipe for baked salmon with lime sauce will remind you of the warm days that we all hope will soon be here.
I love that Weis has salmon fillets in individual packets so you can make as little or as much as you like. You’re probably going to want to double this recipe, though, because it is incredible. The sweetness from the honey, the tartness from the lime, and the little kick from the cumin really sets this salmon dish apart. I really can’t wait for warmer weather because I think this would really be amazing on the grill.
This recipe for baked salmon with lime sauce is really easy to make and you can throw some veggies in the foil packet before baking for a more complete meal. Salmon goes great with pasta or rice, too. I served mine with orzo. Bonus: Drizzle the juice that’s left in the aluminum foil over the pasta or rice. It really makes the meal.
If you’ve been reading my other recipe posts, you know I like to share just about everything I make with my grandparents. I had lunch with them a few days ago and asked them if they liked salmon. My grandfather gave a non-committal agreement, but when I told him I would be making the salmon with lime and honey, his eyes grew wider. I had his attention.
“Wow. That is good,” my grandmother said when I brought it over. For some reason, my grandmother thinks I can’t cook. You may remember when I made turkey lettuce wraps and she told me she wasn’t hungry and then devoured three of them. That’s because she thought they wouldn’t be good. Ah, grandparents.
Baked Salmon with Honey Lime Sauce
Ingredients
- 2 salmon fillets
- 3 Tbsp butter melted
- 2 Tbsp honey
- 1 tsp cumin
- 2 cloves garlic minced
- Juice of half a lime
- Zest of half a lime
- Lime slices
- salt and pepper
Instructions
- Preheat oven to 375
- Line a baking dish with aluminum foil. Place the salmon in the baking dish and sprinkle with salt and pepper.
- In a bowl, mix together the butter, honey, cumin, garlic, lime juice, and lime zest.
- Pour the lime mixture over the salmon. Top with lime slices.
- Bake 15-20 minutes.
- Optional: Place under broiler for a few minutes after baking.
That honey lime sauce on the salmon sounds so delicious! Sweet and tangy is my favorite!
