CSA Week 15 & Cinnamon and Spice Apple Chips
This week’s CSA was the perfect mix of produce. My co-worker is out of town so I get to keep everything for myself. This week’s CSA included prune plums, bell peppers, apples, corn, fennel, and potatoes.
I have quite a few ideas for recipes, but I need to stop at a few places to pick up some spices and a specialty balsamic vinegar. I just discovered a local spice shop that grinds its own spice blends so I definitely want to check them out.
The apples are Gala apples and they have a very sweet flavor. I decided to make apple chips out of them. With the first batch I made, I used way too much spice and they did not turn out very good at all. I cut the spices in half for my second batch and the apple chips turned out a lot better. I used a mandolin to slice the apples for my first batch and a knife to slice them for the second batch. I prefer using a knife since there is a slightly lesser chance of slicing my fingers with the knife than the mandolin. The combination of cinnamon, allspice, and nutmeg just give the apple chips a warm fall feeling.
Cinnamon and Spice Apple Chips
Ingredients
- 2 apples sliced
- 2 tsp cinnamon
- ¼ tsp allspice
- ¼ tsp nutmeg
- splash of lemon juice
Instructions
- Preheat oven to 225 and line a baking pan with parchment paper or aluminum foil. Place the sliced apples on the pan and sprinkle with the lemon juice.
- Mix the spices together and sprinkle half on one side of the apples. Turn the apples over and sprinkle with the remaining spices on the other side.
- Bake for 60 minutes. Flip the apple slices over and bake for an additional 60 minutes. Turn off oven, but do not remove the apples. Allow them to cool as the oven cools.
Recipe Notes
Notes: If the weather is humid, the apple chips may not crisp up as they cool. Chewy apple chips are just as good!
